How To Prepare Nigerian Fried Rice

The fried rice is a very important delicacy in the Nigerian homes.
We prepare them for our weddings, burials, dedications and of course, birthday parties always. They are even prepared some Sundays in average Nigerian homes. 
However, not everyone who likes good food can make them. Most students, enjoy them at home but can't really prepare them. Let's check out how we can prepare these delicacies in our respective homes and at a cost-conscious rate.

Ingredients

About 4 cups of rice
5 or 6 medium sized carrots
2 or 3 medium onions
A handful of green beans
A tablespoon of curry powder
1 big size of green pepper 
A little Vegetable oil
Half cup of peas
Meat (beef, mutton or chicken)
100 grams of cow liver
Cabbage to taste
Pepper to taste
Salt to taste
1 teaspoon of thyme
2 or 3 Maggi or Knorr cubes

Method Of Preparation

- Parboil the white rice and keep it aside.
- Set your pot on fire and allow to dry. Pour in about 10cl of groundnut or vegetable oil. You can also use a sachet of margarine.
- Heat for a minute or two, then you add the already chopped green beans and carrots in any order, there are no specifications. Add your salt.
- Stir it for another minute or two, then add your curry powder. Continue adding and stirring until you're ok with the colour.
- Add your cabbage, ground pepper, chopped liver and meat stock. Add the Maggi or Knorr cubes and continue stirring. Taste the food, if it's ok, then continue.
- Add green pepper, the almost-done rice, stir a bit and cover the pot with it's lid.

Cook for about five to fifteen minutes, and it's ready to be served.
